About the festival
This July, we will once again visit Letymbou village in the Paphos district to enjoy a two-day event dedicated to Resi, one of the most traditional dishes typically served at Cypriot weddings.
Resi resembles a porridge made from coarsely ground wheat boiled in meat broth. In the past, its preparation was an elaborate ritual. First, the wheat was carefully washed and cleaned. It was placed in baskets covered with red cloth, and young women, accompanied by musicians, carried it to the fountain. They washed it seven times and then returned it home where it was spread out to dry. The next day, boys and girls, accompanied by music and songs, gathered to grind the wheat with handmills. The wheat had to be husked and slightly broken. In the afternoon, pieces of lamb were slowly boiled in large pots over a fire. Once the meat was cooked, the bones were removed, and the wheat was added to the broth. The mixture of wheat and meat was continuously stirred until it achieved a velvety texture.
The event also features traditional music, dances, other local delicacies, zivania, and village wine.
